In 1999, our Extra Virgin Olive Oil "D.O.P. Collina di Brindisi" was born, a delicate and sweet oil produced from trees grown in the heart of previous centuries and cultivated today by our members in the Agro of Pezze di Greco. Alongside ancient olive groves, younger olive groves dot the landscape, together producing an oil with a refined and delicate taste, typical of the "hills of Brindisi".

The olive harvest takes place directly from the tree using mechanical means or hand-picking, allowing us to avoid damaging the fruit and produce oils of the highest quality. Equally crucial are the milling times; between harvesting and processing, which occurs exclusively at low temperatures, no more than 48 hours pass. This oil, with its golden color and green reflections, is characterized by a slightly fruity flavor and the unmistakable scent of fresh olives. The Extra Virgin Olive Oil "D.O.P. Collina di Brindisi" is produced from a blend of different cultivars: 70% from Ogliarola Salentina expertly mixed with other sweet fruity varieties from our olive groves such as Cellina di Nardò, Coratina, Frantoio, Leccino, and Picholine. Its best qualities are expressed as a raw condiment to enhance dishes based on fish or meat, bruschetta, salads, legumes, and both cooked and raw vegetables.
